WHAT PROGRAM DO I START WITH TO DESIGN KEYBOARDS AND PCB'S?

There are many program's that assist you with creating your own keyboard, my recommendation would be Fusion 360, an 3D Product Designing application that is very flexible and beginner friendly.

For PCB's, KiCad or EAGLE is usually the top applications used. However, I recommend looking over aio03's PCB Tutorial to learn all about the components in a keyboard's PCB first.

WHAT ARE THE WAYS TO PRODUCE MY KEYBOARD MODEL?

Let's start with two ways of producing the components of a keyboard to form the final product. Firstly, CNC Milling is a computerized machining process that employs and controls the rotating multipoint cutting tool to progressively remove material from a workpiece, to produce a custom-designed product. Secondly, laser cutting is a technology that uses a powerful laser to slice through materials.

CNC machining is able to carve and remove material from a workpiece at multiple angles. CNC machines have 3 axes operating at the XYZ plane, while laser cutting only cuts in a 2-dimensional plane.

Keyboard prototypes are usually made with CNC milling; unless of course, they are designed out of plates stacked on top of each other which would be a sandwich keyboard. Which in this case, laser cutting would be a more logical option. When it comes to producing the plate of the keyboard, laser cutting is the go-to; while it is possible to CNC machine keyboard plates and have more customizability; it isn't very cost-efficient. As the process of CNC machining is very expensive compared to laser cutting.
